also the pro burger costco move isn't to buy their premade frozen patties, it's to buy their choice meats and grind your own (some brisket, some shortrib, some sirloin...)

off work today, made a run to the 'co with my mother-in-law

highlights: a shitload of peanuts for $5, jelly beans, an enormous cake for an office birthday party for $16, two great looking chuck roasts for $32, san marzano whole peeled tomatoes for $6, and two san marzano tomato pastes for $4





just trimmed all the fat off one of the chuck roasts and popped it into a sous vide bath

costco chuck roast, 24 hours later:



chuck roast, 18 hours at 137, went in with just salt, finished with salt/pepper/garlic powder and seared in ghee

extensively trimmed the original roast and then tied it with twine

pretty incredible. tenderness of prime rib.

went in to buy a hammock, didn't find one but ended up spending $271 -- $80 for an 8 months of flea/tick treatment for the dog (an excellent deal), 30 lb bag of lump charcoal, some choice strip steaks, some carrots, a giant super soft pillow that looks like a bunny

got a slice of pizza for some reason and it was loving gross. sorry :(

both were cooked at 127f and finished on a charcoal chimney

top is a choice new york strip (FROM COSTCO!)

bottom is a 28 day dry aged grass fed 'prime equivalent' t bone

it's probably blasphemy, but I definitely preferred the corn-fed strip (FROM COSTCO!). I've never loved dry aged beef, and the combination of dry aged and grass feed gave the beef a very odd taste. everyone else loved it though
