So much love for the Normandy vegetables around here, but none for the stir fry vegetables? Those plus rice and some seared Costco scallops or salmon have been my go-to weeknight dinner more times than I can remember. Good stuff

No, it’s ginormous and will basically crowd out everything else in your freezer. You have to commit to eating a lot of green beans, etc. for a while. Thanks to Costco I bought an extra freezer for the garage.

Maybe not as exciting as pizza, but kudos to those who recommended roasting the Normandy vegetables. I stuck them in the oven with salt/pepper/olive oil at 500 degrees until they got nice and caramelized, then just stood over the pan picking out out and eating pieces of nice browned cauliflower/carrot/broccoli. Getting me to snack on vegetables: pbuc

Never been to the ‘co on a Thursday afternoon before! It’s surprisingly crowded. I usually go on weekends when it’s also crowded, but then it’s families trying to get in and out; at 2 pm it’s old people parking their carts in the middle of the aisles. Anyway, they’re now selling 1.5 rotisserie chickens, split and refrigerated, for $5.99. Now, I’m no math genius, but that seems like a better deal than one for $4.99! And since I’m not going to eat it until dinner tonight, cold is okay and the package fits better in the fridge. PBUC

I'm not seeing the San Marzanos on the Costco website. Not sure if that means they don't have them at my store (likely) or don't list them on the website. Anyway, I'll keep my eyes open for them when I go on Sunday... when I'd planned on making pizza anyhow!

Tried the al pastor salad today. It’s not bad; it’s good that they’ve added a vegan option, and for a fatty like me it’s good that I can get something with vegetables. And it tasted good (though I had to laugh at the “banh mi dressing” that was basically Russian dressing). Only thing weird was that it was cold. If the protein had been heated up separately and added to the salad, it would have been about ten times better.

Costco had Serrano hams for $99 (with rack and knife!) I assume that at that price, it’s going to be pretty low-quality ham, but I’m still tempted. It’s a plus that you can just leave it out at room temperature for weeks and it’ll be okay. I told my wife I’d set it up next to the bed and cut off a slice whenever I wanted a snack, Homer Simpson-style; she was not amused

First trip to church since the Corona Era began, and brothers and sisters, it was a beautiful thing. Shelves were well-stocked, and whether it was because of lovely weather or it being the day after a holiday, not many people in the store. My local 'co has clearly done some hiring and staff reshuffling-- one of the tire dudes was helping unload carts at checkout-- so there were zero lines for the first time I've ever seen. Got all the stuff I need, and got out of there fast. PBUC! (I looked longingly at the Toto bidet seat, but we don't have an electric outlet near the toilet, so that's not happening until a bathroom remodel, i.e. never.)

Went to Costco on a Friday. It was a little weird to see what was missing from the shelves. TP, chicken: sure, I expected that. But they were also out of a bunch of standard Kirkland products: 14 oz cans of diced tomatoes, frozen pizzas. They were out of Normandy vegetables, friends! I was actually a little shook.

speaking of cheese, the Costco cannelloni (with ricotta and spinach) wasn’t bad. But it had bell peppers in the filling which made it taste oddly like enchiladas to me.

I bought the chiles a while back to make an enchilada sauce. Didn’t realize they were already salted and ended up with an extremely salty sauce. Diluting it with a whole bunch of sour cream helped but it was still salty. I have about a quart of the salty green sauce in my freezer. I’m thinking if I add a quart of unsalted stock I can use it as the base for a pretty good stew or chili this weekend.

Last trip to Costco I picked up a pack of frozen stuffed squash blossoms: they are stuffed with ricotta and smoked provolone and deep fried. One of my favorite Italian snacks, and much easier than waiting until July when the blossoms are in season and frying them myself! Highly recommended.
