The other day at Costco I saw 1-pound packages of fresh chanterelles in the refrigerated section, cheaper than buying the equivalent weight in dried ones elsewhere. I was going to pick some up, then realized I didn't have anything to cook that was going to require a whole goddamned pound of chanterelle mushrooms. We make chanterelle fritters. Tear them into strips, mix with strips of red onion and squash, boil briefly in water till soft, drain, mix with bread crumbs and eggs, form into pattys, pan fry in butter.
