Once it's so old that it's super sour you eat kimchi jjigae every day and experience joy.

I've seen it grow mold after a few months.

We make chanterelle fritters. Tear them into strips, mix with strips of red onion and squash, boil briefly in water till soft, drain, mix with bread crumbs and eggs, form into pattys, pan fry in butter.
