There have been remasters of 1 - 6, with particularly huge graphical overhauls for 3 and 4. People weren't particularly excited about the remasters for 5 and 6, but that doesn't mean they don't exist. Also, X and X-2 have gotten remasters before 7. My guess, is that the problem is that 7 is a hot rear end mess which explains why they are having to slice it and dice it and essentially re-imagine it so that it makes sense and is fun for a modern audience.
