Anyone have a good recipe for a potato espuma? Curious as to the ratios and style of potato that gets best results. Edit: CDC I lived in the Tower at 801 when I lived in Seattle 17 years ago. They were awesome but a bit higher than your budget indicated. I recommend them if you want to live downtown in a high rise. Although I can work more and I like OT so I do some paperwork while sitting on my couch on the weekends. It's definitely better than the industry.
