The reason is that birds have 4-5 different cone cells and pigments in their eyes, whereas humans have only 3. The fourth pigment is typically ultraviolet, meaning they see more distinct colors in ranges humans can’t. Rare mutations can give humans a fourth pigment, but the lens of the eye blocks UV light, so a working pigment would only allow for more mixtures of colors in the visible spectrum.
