The official reason is the old graphical style was entirely impossible to scale up to get the game out in a timely manner. Luckily they took care of it a decade into development instead of wasting an embarrassing amount of time and money on unusable assets. Also the REALLY early videos were just bought Unity store assets, I think Faerthale was the first zone they built from scratch, and that took them like 2 years to make part of one zone.

So basically the impression I am getting is that the devs really don't have the experience to deliver the game they have promised they would. I am very glad I never crowdfunded this.

there's this one megaloser on the Pantheon subreddit who has been making these, like, lore journey videos about the half-hearted generic world they crapped out and they're some of the saddest loving things. just little snippets of derivative pseudo-lore about the setting, which nobody has ever thought about for longer than it took to get it up on the relevant section of the website, as the camera pans across something that looks like the beta for a mobile gacha MMO called Dragons Hearts Arisen: The Return of the Fallen https://www.youtube.com/watch?v=WzMAMxUf7m4 it's just so bad

If it does and the community balloons, then you're already there with an established presence. If your content is decent then you have a leg-up on the johnny-come-lately's who's output will be compared to yours, hopefully unfavorably for them. Even in the small-scale, that channel demonstrates this. He's been doing lots of videos on lots of different MMOs and single-player RPGs, but most of them languish at less than a hundred views...except his Pantheon-related ones which consistently hit over a thousand. One video on the art style change a few months ago even broke 10k.

The dev team are all volunteering for now, and theres something like a dozen of them. They aren't trying to reinvent the genre, they're just making a game very similar to classic era Everquest. You'll recognize a similar UI, similar item design (NO DROP, attack/delay, procs, etc.), zones, hailing, quest design, stuff like that. They stream a lot of their development, and do some very early build grouping gameplay. Its a very humble project and looks like they know exactly what they are doing (one of the primary developers worked on Everquest for a few expansions in the PoP, GoD era) and seem quite competent. Unlike Pantheon, they actually have gameplay to show at this stage of development. I've been watching gameplay videos at their channel at https://www.youtube.com/@MonstersMemories. You can watch development videos where they're making models or textures and poo poo if you are into that kind of stuff too.
