Coconut macaroons are dead easy, shelf stable, and can be round as well. Truffles are a hit with most everyone if you've got some refrigeration, as are creme puffs. I might be tempted to do something like doughnut bites (sweet) or pretzel bites (savory) with a filling piped in as well.
