Any MMO, really. But most modern MMOs have configurable GUIs ([eg, look at various FFXIV ones](https://www.google.com/search?tbm=isch&q=ffxiv+hud)). Often the clutter is by choice and more excessive than the default. Players add more hotbars so they can easier access more actions and shortcuts. Having a massive party of up to 15 other players naturally adds a lot of clutter (and if you're a healer, it can be important to see all these other players, not to mention mechanics like tank swaps are often based on status ailments put on the other tank).

Some people like to have multiple chat windows to make it easier to manage different types of messages (since each window can usually have its own filters). Most MMOs have an on screen quest tracker because you often do multiple quests at a time and it's just more convenient to track them on screen instead of constantly bringing up a menu (especially when sometimes you do the same daily quests over and over that might require things like killing N of a specific enemy, etc).

MMOs get really technical sometimes. You might need to know the exact percentage of a boss (of which fights can take several minutes) because certain mechanics happen at specific percentages, so we need a detailed boss health bar with percentages. And probably an extra "focus target" bar because sometimes bosses aren't alone and it's crucial to be able to track some other character, too. And both of these need cast bars so that you can see and preempt various mechanics. The nature of boss fights in MMOs (at least for the hardest ones) tend to make things quite dangerous and unforgiving, so players need lots of information. Probably also why MMOs are the only games where I've seen combat parsers exist (they parse the combat log to find things like damage per second).

There's lots of challenging games out there, but MMOs probably really take the cake. Some of the hardest content in MMOs can take weeks or months to get a world first clear. I guess in large part because no one player is ever enough. You need 8-16 people for most of the hardest content, which puts a barrier on ability to practice and makes more points of failure. Of course, also because the game devs purposefully make it too hard via equipment provided so-as to stretch the content out. With time, hard content becomes easier due to better equipment being available.
