Yeah the truth is that they already had the actress from the Elenor flashbacks when she was a kid and it makes much more sense to just use the same actress rather than recast.
It also makes the joke that Elenor’s mom always tries to pass her off as a sister rather than a daughter a little more meta.

One thing that seems strange to me is that Janet has an automatic fail-safe to avoid being rebooted...but there is apparently no fail-safe that exists for Janets being marbleized. In fact there were at least two instances I can recall where Janet was actively encouraging Michael to marbleize her.

I suppose the real world explanation was that rebooting Janet was an idea from Season 1 which went along with D'arcy's hilarious pleas and face-down sand smash for comedic effect. For season 2 they needed to introduce something else that could happen to Janets and this time there was no time or reason to rehash the same joke (especially since we got a great Janet reboot montage early in Season 2).

I guess for an in-universe explanation perhaps the entity (God? Gen the judge? Someone else?) that is in charge of Janets know that there is no harm in them being marbleized since there is an infinite supply of Janets as replacements but since Janets become more advanced when they are rebooted the fail-safe exists to keep Janets primitive.

Or I just realized that the times that Janet is actively encouraging Michael to marbleize her it is because her very existence is endangering the humans. So maybe she is able to overwrite any fail-safe that she might have towards being marbleized because her primary mandate is to make the humans happy like the First Law of Robotics (not a robot).

The 3rd season is still airing. Netflix (in the US, at least) almost NEVER adds a season until it’s completely aired on regular tv.

On my latest rewatch of Season 1, I noticed that Elenor mentions her Dad’s name is also Doug.

And my favorite foreshadowing of the Season 1 twist is in the pilot when Elenor is telling Chidi about her terrible parents and speculates that they are both probably in the Bad Place torturing each other. “It would work”, she exclaimed, so close to the truth.

Nah, not really. Michael sold the concept as getting the humans to torture each other (albeit, without them knowing they were doing it). It was something less routine for the demons helping him but after the numerous reboots the demons were tired of the deception and wanted to get back to torturing (and biting) the humans like they were used to.

I think the main problem with Jason as a character is that the show hasn't done anything to show that he has developed beyond his "initial sin". At the end of season 2 The Judge gives each character a test designed to test their main flaw. For Eleanor, it was selfishness. For Chidi, it was indecisiveness. For Tahani, it was caring too much what people (especially her family) think about her. For Jason we are specifically told that his main "sin" is poor impulse control. For his test he was more excited to play Madden than to even finish listening to the rules.
Throughout season 3 we saw the other 3 main characters improve: Eleanor learns to embrace being part of a team and becomes less selfish; Tahani learns that fame and fortune isn't everything and repairs the relationship with her sister; and Chidi learns to relax and not be so indecisive due to his romance and exposure to Eleanor. But Jason is still the only one that the show hasn't really done much to show him overcome his impulsiveness. I think the show runners still think they are getting mileage out of keeping Jason as the lovable buffoon with a heart of gold but from a storytelling perspective he's still a pretty weak character compared to the growth the others have demonstrated.
