I don't think anyone should feel bad about working on the de-mastered Star Wars editions like 4K77. There was no indication that Disney/Lucasfilm would ever let an unmolested version come out.

I can't remember was "blast it, Wedge, where are you?" altered for one of the Special Edition/2004 DVD releases or did they change it back to "blast it, Biggs" at some point? Maybe they'll play a 4K restoration of the version of Empire where they dubbed over Palpatine's death scream as Luke falls after losing his hand.

The 70mm version of Empire has some differences from the 35mm version (which is what then went on LaserDisc and VHS) because it was sent off to be processed before some final changes were made. They include some audio differences that would then go into the Special Editions, like "You were lucky to get out of there!" instead of "You're lucky you don't taste very good!". There were also some extra shots of the Rebel fleet at the end of the film added into the 35mm version that aren't in the 70mm version. Return of the Jedi is the same on every version as far as I know.
