Cracking eggs on the rim of a bowl is just fine. Don't listen to people telling you they MUST be cracked on a flat surface. I don't care if I break the yolk because I'm whisking them anyway. I don't think any harmful bacteria is going to survive the baking process either.

Ice Cream cake shouldn't exist. Awesome you made bad ice cream and some bad cake and combined them. The only good part is the cold frosting. Also whatever the gently caress that frosting they sometimes put on cheesecakes blows, if you've ever gotten a cheesecake from costco you know what it is. It's the worst and it shouldn't be on cheesecakes.
