It's not like GRRM couldn't have stayed on board with the show when they ran out of books and consulted, but he didn't and I think he's made it pretty clear he didn't like what they ended up doing. I wouldn't assume at this point that what happened in the last few seasons is accurate to GRRM's plan for the books. GRRM said he didn't want to write any material that wasn't in book form, so he ducked out after Season 4.
