Potatoes are really good. I like to slather a big russett in oil and sea salt and bake it for like 2 hours, then I put all kinds of good stuff like butter and sour cream and chives and bacon and salt and pepper in it and eat it up

Good ol' russet potatoes are and will always be the gold standard for potatoes. I mean, you can't make mashed potatoes with red/new potatoes or fingerlings, so that kinda disqualifies them automatically.

Yes, fingerling, they were usually purple skinned twisted up long things. God, fresh from the ground they were awesome. God, everything there was, in amazing soil, small new potatoes straight from the ground to a pot. cabbages as big as your head and plum trees you ate off until you were sick as hell. Boiled or baked potatoes are best grow a loving home and make real food. Stick to the outside of your grocery store, its where actual food is, fruit veg, unprepared meat.
