Freshman year of college I downed two whole bottles of that melon flavored poo poo one night and I ended up passing out with my head in a pale green puke filled toilet bowl. I don’t think I drank any sort of wine for another ten years.

If you only use apple juice the strongest ABV you'll get is 4-5%. If you want higher alcohol content you can add sugar to boost it into the teens before the alcohol kills off the yeast. If you want it higher than that, you're looking at distillation. I think that is why historically wine is made from grapes. It is one of the few fruits that contains enough sugar that the final alcohol percentage is high enough to prevent it from going bad quickly. Beers and ciders just didn't last long.
