somebody give me 6 hours worth of entertainment/things to do. i can't find anything to watch on youtube. i dont want to watch any movies because im saving those for my flight tomorrow. gotta really ration the distractions you know there is a little bit of work that I should do but I really don't care. I made some tea again but that was only 3 minutes. already did my laundry and packed, also about 5 minutes. maybe i could have another shower actually i need to book parking at the airport tomorrow but thats about 3 minutes too.

I got kicked out of a Thai buffet because I took a home Depot bucket that I duct taped over the logo and wrote 'The Bucket from Phuket' on and tried to fill up with pad Thai and leave. But the Indian place doesn't care. I didn't even change the label. Those guys are cool with me. The key is to use naan as insulation.

The fact that you can go into a restaurant, order a dish, and have it appear before you is really quite amazing. There is an incredible dance of ordering, preparation, storing, cooking, and plating that must occur for it to happen. Each step costs money. There is a tipping culture in Canada so some of the labor cost is passed on to the customer, however I'll assume you ordered carry-out and didn't tip (not a dig at OPs character, but hes a shut-in and people seldom do). The cost of exotic spices is almost negligible when it comes to food cost. Saffron is expensive as hell but it really only takes a couple strands to season an entire pot. The biggest cost is typically going to be animal protein. I've typically shot for a 22% food cost. That means If we charge $10 for a dish we can spend $2.20 to produce it. The other $7.80 goes towards wages, rent, gas, refrigeration, hood system maintenance, equipment repairs, cleaning chemicals, and other stuff like point of sale software. The margins are incredibly tight in restaurants, which is why so many of them fail. Places charge $5.99 for rice because they know you're buying it for the convenience and it allows them to pad their food cost a bit and give you more value on the other plates. Indian food is expensive because restaurants are expensive to run, and probably should charge more. Concurrently, customers have been raised on Chipotle and Mcdonald's and think that restaurant food should always be affordable and within reach unless its a "fancy place". So now family run businesses serving authentic cuisine have to push their costs down to compete with multi-national chains. In addition, the trend of "mixed use" apartment blocks going up all over the place tends to subsidize restaurants. People really like the idea of having restaurants and cafes within walking distance of their new urban high-rise. Property developers now offer very inexpensive loans to fill the ground floors of their own buildings, and even throw in incentives like free dining room furniture for restaurateurs. The problem is that you now have a market that is inundated with new concepts that are being run by real-estate investors, and not chefs or true restaurateurs. The market gets flooded with mediocrity and people get tired of trying "that new place" because it inevitably sucks rear end. The consumers' "eating-out" dollar gets spread around hopelessly and honest to goodness mom and pop Indian places now have to charge $19 for the chicken tikka masala because they are only moving 50 units of it a week instead of 150. I won't even get started on what these trends have done to the labor market. ENJOY YOUR MEAL, OP.
