This armored car thing feels like it would be relatively 'easy' (once) to get 'held up' and your shipment stolen.

Just don't plan it in the truck or through easily tracable medium? Hey friend, I will be making a shipment tomorrow from A to B if you happened to 'rob' me it would sure be a shame!

I'm also guessing that people pull off this kind of inside-man heist all of the time and then get caught with money they shouldn't have?

I saw a true-crime episode about Archie Cabello, he and his son basically did that, and had this whole plan to lay low until after the statute of limitations ran out. They lived in a tiny house, no extravagant purchases, all the cash hid offsite, etc. But of course the kid couldn't hold his wad and had to buy a brand new car in cash and other suspicious stuff.

Then there was that Brinks robbery that got made into a movie, where the one guy immediately bought breast implants for every single relative, another one bought a mansion with cash and decorated it with velvet Elvises, and other fantastically trashy behavior.

There's inspections required, but since winglets are almost always some kind of composite and aren't load-bearing, it's possible to just swap out the damaged part for a new one, or just remove it to get the airplane somewhere a new one can be installed.

As long as the wing itself isn't damaged, the inspection is pretty straightforward, although it can ground the airplane for a while if the damage happens somewhere that requires maintenance people to be flown in.

See this is the good sort of technical analysis I like from this thread.

But the original point stands: a couple hundred people who were about to get on those planes have just been told "sorry, your flight no longer exists", and then they're all going to be yelling at the gate staff, and lovely with the hotel staff they're going to have to talk to etc etc.

I took about 150 flights between January 2018 and March 2020 and a grand total of once did I get to the gate and hear "sorry, your flight was cancelled". It was the last Melbourne>Perth flight of the day, and they had nothing until the same flight the following day, so they put me up in the hotel at Perth casino that night. It was pretty nice, I had just spent two weeks in the Pilbara and I was completely filthy through and through.

Yes, this would be investigated, but likely not in-person. The majority of NTSB investigations are fairly simple and don't culminate in a whole board meeting or anything. With air incidents involving contact assessing probable cause meets some important objectives, most importantly "how do we prevent this from happening again?"

NTSB investigations cannot be entered into evidence in legal proceedings and would not be directly cited in an insurance investigation (honestly most insurance investigations would wrap before an NTSB report, which is on a 1-2 year delay), but theoretically could impact an adjuster's assessment. Basically each carrier's hull coverage would eat the initial cost of repairing the plane to reduce the amount of loss incurred by grounding and then go after each other (or the airport) for recovery depending on fault, which would probably be determined in court because that's going to be rear end expensive. If the FAA cited anyone for anything, revoked any licenses or certs, etc. that could be a factor and would be admissible.
