Speaking of cows We always get raw milk when I'm in Kaifeng, and I'm always like "I wanna just drink it raw I'll take the risk" cuz it's hard to get raw milk in America. And my wifes always like "no you dont" then they boil the milk. And I never got it, raw milk is a little risky but it's not that risky and boiling milk ruins it. Then the other week I went and saw the cows, and I get it. I know cows can just be dirty but I think these are dirtier than average. That's all the space they got, too, there's no more, this is in a residential area so there's just houses on every side which really sucks if those people wanna open their windows lol

I can't buy any of the Chinese brands because there were a bunch of milk quality scandals. So, my wife basically said there were all these brands we can't drink. Turns out, the brands with the scandals were all the brands. The boxed stuff comes from Australia I think so it's scandal free, at least as far as we know.

It might have a different taste from raw milk, which i only rarely drank as a kid, but it’s a distinct taste from boiled milk, which I hate. Can’t drink much milk nowadays, anyway. Still love it, but can’t stomach it anymore.

A lot of american milk has the fat taken out (2% etc). my guess is most euros are drinking homogenised full cream. When you take the cream out, the lactose concentratiin is higher. Thus, sweeter milk. Generally milk is pasteurised. Doesnt taste as bad as boiled milk. Never had fresh myself. Fyi UHT stands for ultra high temperature. They techically super heat it to like 135degC.

Most (all?) American milk is separated from from its fats and then recombined to give it uniform consistency between packages. I’d be surprised if European milk wasn’t as well. Don’t drink raw milk. Just like your dog can eat raw meat and be fine, calfs can drink raw milk and be fine. If you hate how your milk is pasteurized, pasteurize it yourself. You can use a ziplock bag or one of those huge half gallon jars and put it in an immersion cooker at a minimum temperature for a length of time. American dairy’s consensus seems to be 145 degrees for 30 minutes.

Wtfffff 蔥油餅沒有雞蛋. No ducking eggs in a scallion pancake. Everything else is right. And scallion pancakes better be made in a big pan so they can get a bit of extra surface area and have some fluffy air inside so you aren’t biting chewy dough all the time.

There’s also 煎餅果子. Which is stuffed with a bunch of things inside like peanuts , julienned scallions, thin paste of doubanjiang, fried crispy dough 油條, a freshly cracked egg to make the waffle have that egg springiness, and some other stuff. I’m not a northerner

They produce huge quantities of milk (over 23,000 pounds of milk per year, for US cattle). The big dairy operations I've seen tend to have large outdoor pens with a structure in the middle that has a roof but no walls, to provide shade and shelter from the rain. I've never heard of anyone keeping the whole herd inside all the time, it would be really expensive to maintain that much barn space and cattle like to be outside.

In the western US, heavily subsidized rageland cattle subsist almost entirely on perennial bunchgrasses, annual cheatgrass and a variety of forbs. Also cows with the freedom to roam wide open landscapes are just as disgusting and covered in their own poo poo as the cows living in an alley way.
