here's how i do sourdough fwiw



it's a mason jar w/ a terrarium heater rubber banded to the side. super easy to keep it nice and warm and you don't need to worry about the room temp as much. by this evening it'll be trying to escape from the jar

my current process is:
- notice my bread loaf is getting small
- remove starter from the fridge and let it warm up overnight
- remove most of the starter and make pancakes with it, add 1 cup of flour and some water etc. and put the heater on it and let it do its thing for about 8-10 hours
- when it's about as alive as it'll get i take most of it out and put it in my bread machine pan and add 1 1/2 cups of flour and some water and keep that in the bread machine on 'rise' setting overnight (basically just keeping it warm). this is an additional proofing step for maximum rise-i-ness. put 1/2 cup flour in the mostly empty starter and some water and mix it up and let that sit out overnight to get going again and then i stick it back in the fridge (swapping the paper towel on top for saran wrap to keep in moisture)
- now it's in the morning on the next day and you're ready to bake. add another 1 1/2 cup flour to the thing and 1 tsp salt, 1 tbsp sugar (i use maple syrup), 1 1/2 tbsp olive oil. and however much water you need. my bread machine (zojirushi) routine is Rest 22m, Knead 16m, Shape 1hr, Rise 35m, Rise 50m, Bake 1:10hr

the hardest part is adding the correct amount of water; too little and it doesn't knead well, too much and it's all wet and it's all dense and doesn't rise well

the other thing i've been doing is sifting my whole wheat flour (use about 3:1 white to whole wheat flour) and adding the bran back in near the end of the kneading step. gives it a great crunchy crust

i put a child window fall safety thing (heavy steel bars) on my bedroom window over my bed because my new pup could have jumped through the screen if he saw something interesting, but i didn't fasten it because i am lazy. last night at 2:30am i was adjusting the window and the thing fell forward and smacked me in the mouth and split my lip wide open

i've been baking bread for a while because whenever i would buy a loaf it would go moldy before i could finish it so i'd have to freeze it, which is ok. but when you bake it at home it seems to last longer. and i can make a nice whole wheat or rye sourdough which i really enjoy. and it's a fun thing to experiment with

Why am I so excited, you ask? This is my wife and I's first home. We've always lived in lovely rentals (we're cheap) and the last lovely rental we lived in, though one of our most favorite places we ever lived, was this like sky blue color and of course this home which was also a rental is the same loving color. yeah, i've gone from walking my dog a lot to hiking with him a lot and now i got a vertical climber. back down to high school weight plus some muscles. basically stopped drinking too and have been cooking for myself more which helps as well
