Homemade beef stew is the best. Especially in the winter. Potatoes, onions, carrots, celery. When I make mine I like to brown the beef first, get a real nice sear on the edges, then sauté the veggies a bit in the rendered fat. Throw in some flour and make a nice roux, deglaze with a healthy pour of Guinness Stout. Toss all that beef back in with some stock, maybe some thyme and bay leaves. I like to quarter some mushrooms at this point, put em in the pot with everything else. Bring just to a boil and then simmer real slow and low, all afternoon. Ain’t no rush, you ain’t going anywhere. Maybe put a coat on and light the chimnea outside and drink a few of those stouts with family and friends. Now that stew’s got a few hours under its belt, maybe give it a taste. Oh yeah, she’s ready. Nice and thick. Ladle it all into a few bowls. Now put those bowls in the fridge until morning so all that hot fat congeals and you got yourself a drat fine breakfast.
