You could probably prank this Texas lady by spending an inordinate amount of money and flying a pro pit master out from Texas but letting her thing the food was a local inauthentic recipe and she’d hate it. The only thing americans love more than regional food is regional rivalry.

Enfys posted:It's definitely a thing and really delicious. You can throw chilies and other herbs/spices in when making sauerkraut. There's a thing in Carolina & surrounding states called "chow chow" that's cabbage and other end-of-season veggies all chopped up in a relish, most of the time with hot pepper too. I absolutely adore it, the stuff is amazing spooned over red beans & rice and stuff like that. Not exactly a sauerkraut and more of a pickle, but you could probably also sour ferment it like kraut.
