People like to go on about bread being unhealthy (white flour, gluten, carbs, etc). I think it's amazing how healthy it is. Like, for thousands of years ordinary people in Europe/Middle East/probably lots of other places I know less about ate little else and survived, often for many decades. Obviously a diet with lots of leafy greens and lean meats and such is much better but it's still pretty cool how much of your nutritional needs are satisfied just by bread. Even modern crap like Wonderbread is fortified with so many incredible vitamins and minerals - when was the last time you saw someone in the developed world with beriberi or pellagra? I'm not advocating a bread-only diet, I just think we should give credit where credit is due.

my bread thought is who thought wheat would taste good, and that the process to make it good means grinding it up and adding bacteria. in the wild its just spiky and unappealing except for the colour which I think was bread into it (tee hee). who even started that path. it's crazy. and what other weird things could we be doing to things that no-one is bored enough to try because we all have iPhone 12 Pro Maxes and Playstation 5s? maybe if you get a bunch of hamsters to jizz on granite and then set it on fire and then pour acid and fairy floss on there and freeze it and drill it apart it's like, delicious or something
