the thought of those huge beautiful industrial kitchens gathering dust as prepackaged stuff is scooped into cups in a corner fills me with horror the potential output with even a minimum of labor and bulk inputs in a kitchen like these schools have is incredible, but I guess doing so excludes the middle men so RIP

They work for some contracting company that goes out of business every two years and is replaced by a new business (run by the same couple of people). if it's anything like the scam private schools around here, they go out of business on a cycle to avoid lawsuits that are piling up, and open up in the same location with the same staff and same current crop of contractors (maybe forced to reapply at a lower rate) but with a new name lol

There's quite a few who just work to buy them up and get grants and then sell the properties a year or two later, then use that money to lobby for more policies that will end up causing schools to get closed down. it's a great system we've got!
