I've been trying to make really good pancakes for awhile now and this recipe is the closest I've come so far:

Dry ingredients:
1 cup flour
2 tbsp sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Wet ingredients:
1 egg
2 tbsp oil
1 tsp vanilla
3/4 cup buttermilk

Like all pancakes, you just mix the wet ingredients and the dry ingredients together separately and then combine the two mixtures and scoop it into a pan. However, there are a few tricks, that are necessary in order to make them really good:

Instead of scooping the flour directly from the bag with your measuring cup, you need to use a spoon to scoop the flour into your measuring cup and level it off. This is important to get the right amount.

When mixing the wet ingredients, you need to whisk the egg and the oil together before adding the vanilla and buttermilk.

After adding the wet ingredients to the dry ingredients you stir with a spatula until it is just barely mixed (it will still have lumps, but otherwise all the batter has the same consistency and you won't be able to see any dry flour).

Wait 10 minutes before scooping it into the pan. Use this time to heat up the pan. Add some oil or butter to the pan and set the element to medium-low heat (around 3-5 if your element goes to 10).

If you use a 1/4 cup measuring cup to scoop the batter into the pan it will make 6 pancakes.

I made the saddest huevos rancheros today. Fried egg on a rice tortilla with avocado, tomatoe and salsa with a dab of yogurt.

The rice tortilla and wheat tortilla packaging look very similar and I'm writing a letter to the manufacturer.

I subscribe to cooks illustrated and a recent edition had a recipe for how to make eggs for breakfast sandwiches that turn out like this:



And it's fairly simple, but also looks great AND you can make them in advance, so I'm looking to get motivated to whip them up soon

e: one of their recommendations was to use cream cheese, dill, and smoked salmon with them as toppings and I thought that sounds fantastic

According to their recipe, whisk them and pour them into a metal 8x8 pan that's had cooking spray applied, then put that into a rimmed baking sheet, and add apprx 2 cups water to the larger pan to regulate the temperature and place into a 300f oven. Don't season until after they've set.
