If you use a digital camera and just naively desaturate the image in photoshop, you're going to get a different result than something that was shot on black and white film. This doesn't really matter for most purposes but it could matter a LOT for training an AI to infer colors from very old black and white photos, especially since a lot of really old black and white film had disproportionate responses to different wavelengths. Yeah ok. Guy seems to be riding a little hard when he's stating that the API is fundamentally flawed if all that seems to be missing is that the collapse of the RGB channels into a single brightness channel needs to be altered to take into account different film profiles.
