Yeah club soda has a li’l bit of salt in it and if you take the Pepsi challenge with it side by side with plain seltzer it’s noticeable. That’s by design since it’s meant to be used as a mixer and the salt enhances the taste of the drink.

The quinine in tonic water comes from the bark of the south American Cinchola tree. The tree got it's name from the wife of some Conquistador. It was the only thing that people could use back then to treat malaria, which was a huge problem for white Europeans who had little or no resistance to it - on a side note, that's also why so many African slaves were brought to the new world. Later, the English would import it to India - hence the popular brand of Schweppes Tonic Water has 'Indian Tonic Water' on the label. This was also around the time when gin was the most popular clear spirit for making cocktails. Vodka would later become the most popular cocktail spirit. People wanted to taste the non-alcoholic ingredients of their cocktails and all the botanicals in gin were overpowering. For some reason a few years ago there was a huge gin revival in Ireland and all be damned if I know the reason why. It was getting ridiculous. Sure, we keep fresh lemons and limes but people started asking for poo poo like honeycomb and fresh strawberries out of season. I'm glad the gin fad is over.
