They are called "Host(ess) clubs" and are featured quite extensively during the series, especially in Yakuza 0. Basically, Japan has quite prude laws against pornography and prostitution. The free market tried to move around it and to fill the demand with the given supply. That's why there are countless businesses, which aren't real prostitution but as close to it as the law allows.
The clubs themselves are (baring backroom dealings) just that. You go in there, and a bunch of pretty girls party with you and goad you into spending excessive amounts on food and alcohol for the table and give huge tips. It's a prude strip club.

I don't want to demean women in that industry. I guess you need more than just looks to manipulate patrons, which is a skill.

Saeko is great. She's like one of maybe 3 women in the Yakuza series which actually get to do something. I like this series, but their portrayal of women is very Japanese.

Saeko's song is probably my favorite of the bunch. I actually went back and played that one after it wouldn't give any further rewards, just because it's so fun.
But that wink at the end always felt weird to me. Don't you usually wink with the eye which is closer to the reciever?
