People have claimed that the Bitcoin infrastructure can be easily taken down by governments. Why is that the case? And is it possible to build a cryptocurrency system that is impossible/very hard to take down? (Like for example torrents.)

I think it's important to make a distinction between bitcoins and proper cryptocurrencies. I don't think bitcoins will be successful, because they are a giant loving scam. A cryptocurrency, that has been designed to be useful for fast, convenient, secure and anonynous transactions on the other hand could be very successful.
