I wanna say that the thing that knocks mooks out is just regular web spun into balls, something that Spider-Man has done for a long time. Impact webbing works differently - small pellet or other solid object that expands and spreads webs on target impact. I can think of only two instances in the comics where it was more useful than regular webs (fighting Venom and then vs Doctor Octopus II) - a big part of it is an excuse to 90's up Spider-Man.
