Sous vide at 149 F and poured over some sausage with a bit of salt and pepper. The whites are runny and make the sausage better and the yolk is like a custard and is delicious. Buy a sous vide machine guys.

Toads in the hole with homemade bread are awesome and cracking three eggs into slices of pepper and cooking them over easy is a nice easy way to make score points for presentation without really having to do much besides not be too stupid to cook eggs.

Ingredients 2 cups flour 4 teaspoons baking powder 1/4 teaspoon baking soda 3/4 teaspoon salt 2 tablespoons butter 2 tablespoons shortening 1 cup buttermilk, chilled Directions Preheat oven to 450 degrees. In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don't want the fats to melt.) Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky. Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough. Place biscuits on baking sheet so that they just touch. Reform scrap dough, working it as little as possible and continue cutting. (Biscuits from the second pass will not be quite as light as those from the first, but hey, that's life.) Bake until biscuits are tall and light gold on top, 15 to 20 minutes.

Scrambled: whisked with heavy cream and a dash of salt and scrambled in (real) butter over a low heat. Take off the heat before completely scrambled to avoid over cooking. Any bacon or sausages should be cooked separately. If I'm not cooking, my favorite eggs are sausage migas with chorizo, cheese, tortilla bits, tomatoes and serranos and drizzled with a heavy amount of queso.

Smashed eggs. Put them in a pan as if you're going to fry but with only a splash of fat. Mix the yellow in with the white just enough that there's a bit of yellow everywhere, we are not making scramble here. When you can flip it without it assploding, do so. Fry on both sides till its lightly browned. Pros: It's a delicious crispy fried egg without the lovely textured white bits. You can make it any shape for whatever bread you have. Cons: THERE ARE NO CONS.
