Wild game should probably always be well done unless pasteurized through other means (ie sous vide) due to parasites but like other birds goose does well done much better than beef. Geese aren't big carriers of salmonella so if you get a goose from a farm medium rare is probably fine

This is a cool and good post, don't overcook pork, but be wary about any wild game you kill.
