But surely if they had not sent Durkon away, the Order would not have had his help and probably would've failed against Xykon, who'd then likely bring doom and misery to the Dwarven lands via the Snarl? Much more doom than one vampire cleric will accomplish? It seems like the greater doom would've occurred if they'd never sent him away in the first place.

Unfortunately, according to the SRD, "A vampire cleric has access to two of the following domains: Chaos, Destruction, Evil, or Trickery." http://www.d20srd.org/srd/monsters/vampire.htm Of course, no one is saying he has to adhere to that.

Maybe it was his staying in the lands that causes said doom by Xykon winning, thus when they sent him off and he joined them they had averted the prophecy? Like a reverse self fulfilling one, it only happens if you DON'T try and stop it.

It's pretty vague whether a vampire can choose among those domains in addition to his or her god's domain, or if they can only choose among those domains.

If it's vague, Rich's gonna pick the one that serves his story, hence Death and Destruction.
