I think the point of all the criticisms in the episode were that everyone thinks they can use these techniques to good effect, but few really do. Just like anything, a talented writer can use flashbacks or voiceover or in medias res really well, but most suck at it.

The thing is there's two different things - In Medias Res just means starting the story right in the middle of the action - you can make a story that's presented in chronological order with an in medias res opening - Saving Private Ryan begins with a huge, confusing, intense battle scene but continues on from that point rather than flashing back to the leadup, because it's the consequences of that battle that kick off the story rather than the battle being the climax. The "Three weeks earlier" thing is combining an in medias res opening with a big flashback - basically starting at the climax and rewinding, rather than working up to the climax organically.

In media res is good and proper storytelling. In media res with flashbacks is a crime against humanity. You sometimes want to start a story in the middle so it's tense (or some other feeling) wire-to-wire. You cut out the beginning because the beginning doesn't fit the mood you want for the piece. You have to lovingly craft the relevant backstory by events that take place during the remainder of the story. The whole POINT of starting in the middle is so you don't include the boring beginning. Starting in the middle then going BACK to the beginning is bad. Full stop.
