trip report: this makes a pretty good 'za. - the dough needs a bigger bowl than you'd expect, if it doesn't have room to expand it ends up too dense. - fresh mozzarella tastes better than low-moisture but you have to find a way to get some of the water out before it goes on the pizza else it'll be weirdly wet. - don't add sugar to the sauce. - sliced portabella is a good pizza mushroom.

Yeah he tries way too hard. Also he's not as smart as he pretends.
