twoday posted:who has got some hot salad tips for me so like the whole thing abt salads is this: what are yr goals do you want a salad with a hot protein atop it? are you sure you don't rly want a soup? either way you have options but i won't get into that here now twoday you need to define "salad" bc there is some bullshit here that involves fruit and/or cooked proteins made cold and mixed with mayo that call themselves salads. that bullshit is a soup and everyone knows it. don't try to do that ok now if we're talkin greens with other poo poo on it, that's good salad and smtg to be aspired to here is the way to make a good one-of-those-salads 1. fresh greens AND HERBS. this is a thing that ppl gently caress up a lot. you want raw herbs too, ones that fit with the flavor profile of the whole thing 2. a great salad doesn't need dressing and anyone who tells you otherwise is a liar and a fraud 3. a variety of texture is the most important thing that you can even imagine a. get some seeds, some grains (unless yr doin gluten free which is a whole boondoggle i'd rather avoid here but is by no means a barrier to good salad) b. fruits, berries, legumes. if yr salad has fewer than 5 of these you have hosed up c. firm veggies that have good cronch to them but can also follow this next guideline 4. if yr salad cannot be poked and picked up with a fork, many will be derisive and say it is not salad. they are wrong and apparently have never heard of spoons a. keep things diced and only dice them prior to serving unless you want a soup on yr hands i just realized that the use of a spoon reveals that salads are ultimately part of the stew food group. so be it. 5. freshness is the name of the game. you will never have a better salad than one which has just been butchered after being taken from the earth and that's a fact. if you cannot get greens that were harvested within the last few weeks, give up. it's fine; this is not a judgment of your skills. it is an intractable fact. and after you have eaten a subpar salad you know this as you lay in bed attempting restless sleep. 6. there are no rules for a salad but you will know it when you see it, and if yr not sure make it for yrself first. be unafraid to be critical as you are the only one who will know this happened. 7. it's a good loving salad, and you will know it the moment you taste it, and you will know you can recreate it at any time so long as the ingredients remain available. and when you can't have one ingredient, you will search yr heart and know exactly what to use instead. 8. you are good at making salads. do not convince yrself otherwise. in conclusion i love you and i am picking up my merch from yr store tomorrow and i am excited but also tired and i forgot where i was going with this. ok thanks

thx shvps. I'm pretty happy with how those turned out I've been meaning to take some photos or video of the baking process to post here but it's kinda tricky because I use my hands to knead the dough instead of a machine so I don't wanna be touching my phone in the middle of it all. Gonna have to see if I can get my gf to help me document it some day or something.

Regular wheat flour, whole grain wheat, water, oil, sugar, salt, yeast and a bunch of grated carrots mixed in as a cheap way to give it taste. e: oh yeah and i brushed them with egg before the oven to give them color. gonna try milk or cream next time because the egg gives the crust a texture i associate more with sweet buns

I love kneading too much, those no-knead recipes remind me of cold brew a basic loaf inside a Dutch oven in a regular oven with a tablespoon of water in the pot is the easiest way to get crusty bread. with baguettes you gotta open up the oven and flick or spray water on them a couple times I think. what's a better way

I saw a recipe on serious eats for basic bread but it called for a dutch oven too and I don't have one I've made plenty of pizzas in my cast iron though, wonder if it might work in a pinch

It angers me greatly how complicated people make basic bread sound People have been baking bread for thousands of years. it's really not that complicated I'm not sure what a dutch oven is but I feel confident in saying you don't need one

I havent read any horror stories with cheaper ones losing glaze, cracking, etc
