What exactly happened with the Reply All series and host? I listened to their explainer podcast and left more confused. Something about the host(s) creating their own toxic environment within Gimlet?

Reply All is the flagship podcast for Gimlet Media, they've been there since the start, have a good relationship with management and probably own stock in the company.

Gimlet was acquired by Spotify, and around the same time, there was a union forming at Gimlet lead by the person quoted above. To protect the deal with Spotify and their own payouts, the Reply All people tried to bust the union.

Now that the deal went through and the hosts probably made millions of dollars, it's a natural time for them to depart anyway. And like other podcasts owned by Spotify, Gimlet will probably be turned proprietary and bled dry.

Oh wow thanks for this. For someone to actively take part in union busting and then host that podcast specifically is mad.

I wonder if these quick cut videos are a response/backlash to the David Gelb style food porn videos like Chef's Table. The footage here looks incredible but the editing and music is so frantic it's hard to get a sense of anything.

Yeah couldn't watch that very far. Those tarts they had are great though, I'm kind of biased because I think any sort of tart or custard tends to have the best ratio of effort to appreciation but they're pretty quick and not too hard to pull off.

Beats the hell out of spending hours making eclairs or mille feuille and having people treat it like a loving twinkie or gas station doughnut.

Matty Matheson's Just a Dash series editors have created a really fun niche with their manufactured drama editing and Matty's big personality. His recipes can be terrible e.g. his latest "I spent hours making clarified beef stock, now I'm going to boil A5 wagyu in it with butter sauteed veg" but the crew and editors turn it into something very entertaining. Like the recipe/food is just a supporting cast member now.

I think it's one of the early pizza ones where he gets it stuck in the oven and almost ruins it.

Also here's even worse than Sober Kenji when it comes to using every goddamn thing in the kitchen. He should do a vid of him washing that crap the next morning.

There's something about Kenji that just rubs me all the wrong ways, his info isn't wrong, but everything about the way he presents it is just infuriating. Dude is also massively out of touch with the realities of cooking at home most of the time

Ethan Chelbowski did a version of one of Kenji's dishes that was quicker, easier, and looked like it tasted better, and the fucker showed up in the comments to "Explain" why his was better.

So? Kenji apparently doesn't think that children have tastebuds, Doesn't understand nutrition, and thinks children are morons who can't use a knife. He defends himself by saying he needed to make it available to poorer neighborhoods, despite y'know skin on chicken being much cheaper.

And even with everything else being equal, coming into a diffrent channel to start poo poo in the comments, when the person using your recipe is nothing but respectful, is incredibly pathetic. More so when you remember Kenji is an MIT graduate and the son of a Harvard Alumnus, So maybe Kenji should keep his mouth loving shut when he talks about what poor people are able to cook

How Wonderful!

I only have excellent ideas
I do not have an especially big or nice kitchen, it is certainly smaller and worse than Kenji's, but I don't often watch one of his home cooking videos and feel like I'm looking at a decadent fantasy. He has more space, nicer basic tools, and a few gadgets I don't have but not much that precludes me from following along and gleaning something.

I feel like you're seeing a level of aggression that just isn't really there. The guy responded to a video of a fan remastering one of his recipes, and compliments it more than a few times. That seems kind of dope to me .

Kenji posted:

Hey, nice video and great recipe ideas. My recipe has a lot of extra parameters that are required for the magazine. First, it has to be super simple to make (can't grind it yourself, no additional recipes like pickles or toppings, etc), it has to meet certain nutritional thresholds (no chicken skin, lean ground meat), ingredients have to be inexpensive and available in supermarkets in very poor neighborhoods, no special equipment like food processors or stand mixers, etc.

Different recipes for different parameters, different audiences, different needs.
For flavor, I'm not sure if you got it in your newsletter, but there were a couple flavor variations (one with parmesan cheese, one with roasted chiles) that address the plainness of the basic recipe.

Nice work though, I liked the video!

...and like Sweat Poteto pointed out, it's from a kids magainze. No duh they're going to not that kids shouldn't use knives on their own.

Lol at all these YouTube upstarts trying to make a name for themselves by challenging well known names of cooking

At least be smart and use fast food as your target like Ragusea does, everyone agrees they can be improved on and nobody is gonna defend a corporation

There are reasons to criticize Kenji: his older recipes were too salty (seems like he took feedback on that and now just says season to taste). Sometimes he doesn’t grasp the science that he talks about and gets corrected by Dave Arnold. The jerk made fun of my home-made baking steel. But the man has a huge catalog of amazing innovations in cooking that have altered professional recipe writing nationally

LOL at a punk move like picking a children’s newsletter version of a recipe to challenge

Kenji might suck at video production, but he has the thing that counts: he comes up with great, innovative recipes

Even after Kenji made fun of my baking steel I’ll still use his recipes because I’m looking for expertise in recipes, not slick video production and food photography, I don’t even care if he was mean to me. If I cared about verbal abuse I wouldn’t be in Goons With Spoons

Have you heard of a knife, This might surprise you but ground meat actually predates the food processor. Thousands of years ago mankind learned of the secret forbidden art of chopping chicken a lot. Even better by using this forbidden knowledge you don't have to wash a food processor, only a knife and cutting board.

So I think you may just be mad, and Kenji fit the shape of the people you're mad at?

I mean you're not really wrong about anything here in general, you're just being really peculiarly aggro about a recipe printed in a magazine edited by people you don't agree with anyway. No one who edits a magazine is going to understand actual poverty, and people in actual poverty aren't going to improve their station in life by following recipes in magazines. It's entirely performative, meant so the magazine's editors can Feel Like they're Supporting Good Causes, and I think the recipe writer is probably the person least involved in maintaining the cycle of injustice.
