Gimlet was acquired by Spotify, and around the same time, there was a union forming at Gimlet lead by the person quoted above. To protect the deal with Spotify and their own payouts, the Reply All people tried to bust the union. Now that the deal went through and the hosts probably made millions of dollars, it's a natural time for them to depart anyway. Yeah couldn't watch that very far. Those tarts they had are great though, I'm kind of biased because I think any sort of tart or custard tends to have the best ratio of effort to appreciation but they're pretty quick and not too hard to pull off. Beats the hell out of spending hours making eclairs or mille feuille and having people treat it like a loving twinkie or gas station doughnut.

Matty Matheson's Just a Dash series editors have created a really fun niche with their manufactured drama editing and Matty's big personality. His recipes can be terrible e.g. his latest "I spent hours making clarified beef stock, now I'm going to boil A5 wagyu in it with butter sauteed veg" but the crew and editors turn it into something very entertaining. There's something about Kenji that just rubs me all the wrong ways, his info isn't wrong, but everything about the way he presents it is just infuriating. Dude is also massively out of touch with the realities of cooking at home most of the time Ethan Chelbowski did a version of one of Kenji's dishes that was quicker, easier, and looked like it tasted better, and the fucker showed up in the comments to "Explain" why his was better.

I do not have an especially big or nice kitchen, it is certainly smaller and worse than Kenji's, but I don't often watch one of his home cooking videos and feel like I'm looking at a decadent fantasy. He has more space, nicer basic tools, and a few gadgets I don't have but not much that precludes me from following along and gleaning something.

I mean you're not really wrong about anything here in general, you're just being really peculiarly aggro about a recipe printed in a magazine edited by people you don't agree with anyway. No one who edits a magazine is going to understand actual poverty, and people in actual poverty aren't going to improve their station in life by following recipes in magazines. It's entirely performative, meant so the magazine's editors can Feel Like they're Supporting Good Causes, and I think the recipe writer is probably the person least involved in maintaining the cycle of injustice.
