Is he really claiming that he invented mixing ketchup and mustard?

I think it’s more a rant about people saying mixing ketchup and mustard is not a sauce or not cheffy enough.

How much is Claire going to regret that Cadbury Egg suggestion she made in the latest episode?

Honestly? Very little. The hardest thing she’d have to do is tempering the chocolate.

Man all I can think about when I see his late night videos is: that is a lot of work and clean up for a "snack".

Also I wonder how he doesn't wake up everyone in the house between the smells of cooking and the hood vent being on.

She and her husband used to have a restaurant in New York. It unfortunately went under. I think that was before she started working at Serious Eats.

That collection of vintage cooking stuff makes me think she probably has some of those terrible cookbooks. It would be awesome if they did an episode of her making dishes from those books.

I may need to take a crack at the dosadilla and then a dosa crunchwrap supreme.

Also I feel that there needs to be a BA makes pet food episode.

I read an interview Sohla did a while ago where she talked about how she just made plain American burgers in her restaurant but all these customers would tell her they tasted so exotic and that she must use some crazy spices from her ethnic background. She got tired of it and just started lying and saying yeah she puts Indian spices in them because that's what people want from her. If you're brown and work at BA they won't let you make french food. Look like Molly then it's permissable to add a zaatar rub to your pork chops.

more falafel please posted:

I've rewatched a bunch recently where she has to cook sugar (starburst, mentos) and she constantly overshoots her temps and wonders why it sets up hard. "Ok, I just want to take this to 260, it was at 270 last time and it was too hard" "oh no this is at 285. It's fine." "Why won't it pull?"

That and the chocolate tempering thing always bother me about Claire. Is it unreasonable of me to expect a pastry chef to know how to temper chocolate and boil sugar?

I wonder what happened to the kitchen used in the 2nd video, it used to popup time to time in the BA videos. It doesn't seem like it's just a different angle of the commerical test kitchen we see nowadays.

Claire used it for what I think was her first video.
