So, I lost the pictures of the last one but this time I'm taking them as part of the process. Piglet just got here today! Enjoy!
So this step one. I sourced the pig from a local organic butcher. Price was 11.99 a pound per market, I asked for 15 but the pig came in over that. Thankfully the butcher rocks and didn't make me pay the extra! So, here is the piglet just out of the bag.

Turns out I can't edit a post to add pictures. So, the brine. I used salt, pepper, sugar, and apple cider vinegar. Pretty simple really. Add everything, pour water in bag, close bag, shove in fridge for 24 hours. The dry part.
