My sister was in town this past week visiting my parents, so for her last dinner at home I burg'd for the fam.

My burg consisted of Sir Kensington Special Sauce, pickle chips, iceberg lettuce, caramelized red onion, more sauce. Once I picked it up, I didn't put it down. Messy burg. Here's a terrible photo

I licked the spoon, rendering a nice sampler of caramelized onions, GP and 'zola, and I could eat just that poo poo alone.



But we got bigger burgs to fry.



Swiss cheese on the bottom, because this is a patty melt, goddammit.

How much sizzling gorgonzola have you had in your life, you plebeians?

I rarely get jalapeños on pizza but they’re perfect on a Hawaiian. Hit me with those pepperoncinis on everything else pizza (and burg) related though.

Goodness no, now that wouldn't do at all!
My favorite topping lately is chiles toreados, blackened jalapenos marinated in 50/50 soy sauce/lime juice. They're great on anything but they're amazing on burgers.

for the ribs we used just regular st. louis style cut, salted overnight, then rubbed with meathead's memphis dust https://amazingribs.com/tested-recipes/spice-rubs-and-pastes/meatheads-memphis-dust-rub-recipe/. ribs were smoked on a pellet grill for 225F for 4 hours. the mcribs are a great way to use up leftover uneaten ribs.

mac and cheese was also from serious eats, https://www.seriouseats.com/sodium-citrate-baked-mac-and-cheese with the critical factor being sodium citrate

sodium citrate is loving magical, and that kenji recipe is god-tier. The only thing I would change is swap the pickles with some spicy pickles or make some proper cuke and onion salad and top with that instead.
