Aww yeah thats right its sunday roast time. Big old slab of beef with pastrami seasoning in the cast iron with fennel onions garlic some carrots. Gonna serve it up with some braised chard and mashed potatoes and fall asleep watching DS9. Maybe I'll post some photos of the process. Maybe I wont. Maybe gently caress you.

Yeah its good braised too and a bit more economical than say, a lamb shoulder. Plus theres the bonus of only needing to be in the oven for 3 hours as opposed to a 12 hour ride in the smoker. Plus this is apartment living so I dont really have space for a smoker.

EXPLODE sherry vinegar into your greens made some pomme puree, its about 1/3 butter by weight and real good I dry roast the taters and then force them through the tamis, when mix cold butter through to make the emulsion and the result is velvety and rich Money Shots:

Let it go longer, even if it hits internal temp it still takes time for all the connective tissue to break down. A lot of people will wrap it in foil when it hits temp and throw it in a cooler to rest for a couple hours before serving.
