The Expanded Universe never explained where humans came from, and even in-universe there are only theories that they're originally from Coruscant, or are descended from a totally separate species that used to live there. In the 90's there was a (rightfully cancelled) book in the works that would have explained that the first humans were actually colonists from Earth who fell into a wormhole that sent them back in time.
