here's my chili garlic recipe, adapted from something in Mark Bittman's How to Cook Everything:

0.5oz red or green thai chiles (use other chiles if you want it less spicy, these are pretty fiery)
5-10 cloves garlic
1 tsp salt
1-2 tsp sugar
1/4 cup white vinegar
up to 1/4 cup water (don't add until you know you need more liquid)

add everything in a food processor and blend until the consistency is a chunky sauce. if it's not blending, add a little water and try again. use on eggs and in stir fries.
