So, I started my two 8 pound pork butts at 11:00AM, I just finished shredding them. So glad I decided to do it a day ahead of time and reheat because I would have had some unhappy guests tomorrow.

Started a brisket last night, looks like it's just coming out of its stall: I just need to find out what kind of sauce to use for burnt ends. I'm thinking KC is the obvious choice, but the kind I made in the fridge is a little spicier than some of my guests like.

Pulled pork and caramelized onion pizza was a roaring success. In that, we've eaten the whole thing before the game has even started.

I just took it out and it shred beautifully. I had a little taste of it and it was delicious. It's hard not to eat it all but I have to prep other food now.

Game starts at 1030am Monday here in Australia. Got up at 6 and fired up some charcoal for the Weber. Coated a pig belly in a mix of garlic, lemongrass, chilli powder and coriander/cilantro. Got a peanut slaw ready for the toasted ciabatta, going to be a great half time luncheon.

I'm keeping it simple. Pork ribs slowcooked in bbq sauce, grilled burgers (yay winter grilling with no snow ) and maybe some baked beans. Cheese fries or nachos and steamed broccoli (just to make this meal healthy) to go with.
