You can safely skip spin-off games like that because they don't really offer much other than another adventure in the RE-verse. Dead Aim is pretty crappy though, it's basically Gun Survivor 2. If you want a rail-shooter RE, then I would suggest Umbrella/Darkside Chronicles, which I believe are also not just on the Wii now anymore. As well, Darkside Chronicles at least goes into detail about Krauser's past when he worked with Leon prior to RE4.

I'm playing through all the games in chronological order, as soon as I get that component cable for my Gamecube (so maybe never). This reminds me, where in the timeline do the extra story bits in Umbrella Chronicles and Darkside Chronicles take place? Same question for the hilariously expensive and apparently terrible Gaiden? There's kind of a vague period between 3 and 4 where a bunch of unimportant poo poo seems to happen and I want to play it in the right order for some reason.

I could be remembering this wrong, but isn't it on the PS3 disc itself? When you are in the XMC or whatever and have the disc highlighted to launch the game, try hitting triangle. I think you can access the manual that way.

There's one big exception to that rule, but it only shows up three times: Ooze Rachel. You don't have to fight it more than once, though. Revelations is an entire game built to mimic the "Lost in Nightmares" DLC from Resident Evil 5. If I had one big criticism of it at the time of its original release, it's that virtually everything in it on any difficulty is a bullet sponge and it doesn't have the same melee system as RE4/5/6. On an initial run, you should not be at all surprised if you're limping around from fight to fight with much less ammo than you'd prefer, although it does throw herbs at you every chance it gets.

Also, while I'm thinking of it, let me talk about Revelations's plot, because it's bizarre. Without delving into spoilers too much, the thing about Revelations is that it's a story about two guys working against each other with one of them doing his level best to make sure that the other guy doesn't realize that's what he's doing. The problem is that the plan he has for doing so explodes on the runway about ten minutes in and after that, everyone has to dance their asses off to make sure they get out in one piece. In a lot of plots like it, both sides are clever, patient chessmasters and carefully execute countermoves and backup plans all damned day; in Revelations, one side sucks at it and the other favors simple, direct solutions. Like firing improvised satellite lasers at people. RE6 has a problem where it kind of makes sense in the end once you've played Ada's game and if you've found all the Serpent Emblems, since it shuffles a fair bit of crucial plot information off into the files. Revelations has a problem where it has a ton of moving parts and has a habit of waiting way too long for a given scene's payoff. We're not talking about Metal Gear Solid levels of climbing up its own rear end, and it's all self-contained within this game (all you need to know about Jill and Chris going in is that they are both acknowledged badasses), but the story's about ten times more complex than a game about shooting lamprey ooze monsters needed. It's also the game that makes it really obvious that RE Earth is, moreso than previously acknowledged, well ahead on the technology curve. A big chunk of the game is set aboard a floating green-powered city that opened in 2004 and had its own geosynchronous solar collection satellite. (Also, it involves Chris getting from the mountains of Finland to the middle of the Mediterranean Sea in an hour, but we don't talk about that.)
