I've kept rolling straight through his sword arm, and two times out of three I've been fine, but the other 1/3rd he clips+staggers me with the giant sword and I get wrecked. I've consistently gotten him down to around half health while still possibly making it too difficult for myself.
I'll try doing like they did in that video tomorrow, and see if that's more my style.
