Because it allows candidates who don't have huge organizational backing and a bunch of money to run a small ground campaign in just a couple states to figure out if they are viable and then expand if they are. People bitch about Iowa and New Hampshire picking the winners but that really isn't the case. They seperate out the losers, most candidates drop out either before those states vote or right thereafter. A handful of candidates emerge from the early states and the winner is picked out of that group. That's also why these states aren't always all that great at choosing the eventual victor - voting blocs are more split up when there are 10 people running than when there are just 2 or 3. It also forces them to tailor their message to the whole country instead of just a handful of their most favorable states.

Spreading the primaries out is definitely a good thing.
