Has anyone seen something about like... sort of a bunch of "core" styles of sauce? I'm just doing some thinking... like (very broadly) the Louisiana style ones are similar in concept, a lot of the Caribbean ones follow some basic ideas, Mexican ones likewise... just wondering if there's ever been though into sort of figuring out the fundamental sauce styles or if I'm crazy.

I decided to make and sell my own hot sauce, since I love making it. The problem is I never actually used recipes or measurements. That means it's time to workshop!

Pro tip:. 3/2 ratio of habs to green onions just makes spicy onion bullshit. Many habaneros are going to be sacrificed on the altar of my hubris.

I reached out to Heatonist again about the Last Dab they never sent me back in fuckin' October, even though they never got back to me the five other times I tried. They responded, and I got a bottle of the Carolina Reaper variant of the sauce.

Y'all this is a drat tasty sauce. I've had plenty of extreme sauces that just taste like boiled rear end, but there's serious actual flavor in this and while it's not "war crime" hot it's still really, really hot - way hotter than I'd normally use outside of like, a dare, or whatever.

Just got some Exhorresco and Exitium from Burns & Mccoy due to their memorial day sale. The Exhorresco is drat good, but the Exitium is exactly my jam. Would recommend.

This sounds like a great idea, like how mirepoix varies across different cultures. Goon projects are renown for their thoroughness and 100% completion rates, why not start something?

If you like Dave's Gourmet creamy jalapeno but want something that actually has some heat and flavor, Trader Joe's Jalapeno Sauce is a great upgrade.

the oil also helps it stain your skin an angry red color, the mark of the beast (cartoon chicken). I've tried the red one and it is quite good. the noodles are great too. the 2xspicy one is legit hot, like, most pre packaged foods that describe themselves as "hot" are not. flamin' hot cheetos are not really flamin' hot. but those samyang noodles will actually get a reaction from your body. nose running for 10 minutes.

My hot sauce recipe I go hot pepper and garlic straight into vinegar. If I wanted to dip my toes into the lacto-ferment world, would I do garlic and pepper or just pepper in my mash?

Garlic in a mash is bueno. Really anything that won't kill bacteria is fine.

Shouldn’t be, but you could also get it going with just peppers and drop the garlic in when the mash is already fizzing if you’re worried about it.

(Garlic isn’t any more of a botulism source than anything else that isn’t acid/salty enough to kill botulinum—it was just a common organic/possibly dirty thing to put in olive oil, so it caused problems that got a lot of press.)

GOOD MORNING
Made some homemade fire roasted triple pepper sauce last night for my fishing trip today. Poblanos, habaneros and fresnos. Threw some agave syrup and vidalia relish in to balance it.





Got back to the truck and found a bramble of raspberries and threw a few on the chips.

How bad is Da Bomb really? I’ve never tried it but I do have a bottle of Blair’s Ultra Death with Jersey Fury or something like that and it’s hotter than gently caress but not unpleasant. I wouldn’t slather wings in it but it still tastes good and is hot as gently caress in small doses.

Everyone on Hot Ones seems to react worse to Da Bomb than the other allegedly hotter sauces after it. I haven’t tried the Last Dab either so I can’t compare on that end. Is it just the extract making it really awful?

I've got one of the Last Dabs and the Chocolate Plague and neither one is violently hot in my opinion.
All the extract sauces just have no flavor. They taste a lot like pepper spray.

It seems like as Hot Ones goes on celebrities kind of self coach the drama.

I had a bottle of Da Bomb, the OG Last Dab and then the Last Dab redux. Da Bomb is definitely hotter, but tastes terrible. Like, burning tires smell. I'm pretty sure they put it there in the lineup to get guests into the "holy poo poo this hurts I'll either be entertainingly in pain or answer anything honestly or both!" and then the next sauces are there to just keep that rolling.

Da Bomb Beyond Insanity is really hot, but the bad reactions are because it tastes like poo poo. I rarely use my bottle because of it.

I just opened my first bottle over the fourth to toss wings in. It's really hot, but I also think the chipotle flavor throws people off. Not that chipotle is a rare flavor but it's pretty heavily smoked and yeah isn't the most amazing flavor. Heat wise a friend dipped her finger in a small drop, wiped off a quarter on the back of her hand and then tried half of the smear, and we had to get her water for a few minutes. I think it's quite hot myself, definitely get up and walk around, but didn't cause me to cry or snot (what a lovely image).

Just stopping by to report that the El Yucateco Black Label Reserve sucks and that'd you'd get the same experience by throwing $3 worth of charcoal briquettes, grass clippings, and paint thinner in a blender and just eating that.

Speaking of scotch bonnets, here's my current batch fermenting away. About three weeks in right now, will probably make the sauce in another two.

Can confirm. Try Marie Sharp's Special Edition Smoked Habanero if you want something with a similar vibe but is actually good.

Ordered some of this to try, but I actually like El Yucateco Black... although the color does kind of weird me out. Don't think metallic black is natural in nature.

It's that time of year again, got some garden jalapenos and made my own sauce. 21 jalapenos worth of hot sauce... Full bottle for myself and some to hand out to friends/family.



Also hot sauce related, pickling some eggs. Just boiled a whole bottle of Franks with some white vinegar. Pretty lazy "recipe", but it tastes alright. Might taste better with a little sugar to cut the vinegar, but that defeats the purpose of why I make them to begin with.

Just finished a batch of sauce v2.0. About 40 lacto fermented habaneros, two roasted peaches, balsamic and cider vinegar, roasted garlic. Made two bottles, so roughly 20oz. Heat is about where I want it and you can really taste the peaches, but I think the next batch will use some cumin to try to balance it out a bit.

I polished off probably a third of that bottle last night. It really turned out awesome. Was planning on giving the second bottle to a co-worker, but I'm just going to tell him there wasn't enough of the batch to share. I'd love to do peaches again, but that was the last of what I picked. Raspberries and blueberries are starting to ripen, as are some wild strawberries on the property. Going to experiment with all those if I have the chance. Any suggestions on what type of peppers for each?

I think my local firehouse subs has it to put on your sandwich. I know they have Mad Dog 357. Worth checking out if you have a Firehouse Subs near you.
