Has this channel been posted here before? It's got excellent videos in Italian, but with English subtitles if you need them. Its latest video is great:

I also like a previous focaccia video, among many others.

youtube thumbnails are a product of youtube's nightmare algorithm so as loathesome as they are i can only point the blame at The Systen

It's not the algorithms fault, people do that because they allege they get more clicks; they're click bait thumbnails. Much like with click bait headlines, you can do better if you actually try, though. And it's sad to see people just give in to that assumption instead of innovating.

I've been subscribing for a while, the chefs ragging on youtube videos of italian recipes have been very amusing.

There's a big difference between "your job is recipe tester, but we also require you to appear unpaid on video while the kitchen manager makes lots of money for saying wourder and making fried baloney" and "I will pay you a bunch of money to come on my show and do whatever you want"

Babish is extremely self aware and talks Sohla up whenever they're together. The only person you can compare him to that's ever even stepped foot in the BA test kitchen are... Babish, and some of the people who did back to back with Carla.

I only have excellent ideas
I think the skills needed to get somebody without a lot of cooking experience or even some hesitation or anxiety about starting to get to sit down in front of a video and come away excited and eager to learn are not quite the same as the skills needed to be a really really great cook yourself, but are also definitely nothing to sneeze at.

She's grown on me every other time I've watched her to the point I like her now, and I don't know if it was the editing, my own issues, or what, but I really disliked her during her first Top Chef run. She's likeable as heck, so I may have to rewatxh her first season.

the new stump sohla was good but my real question:

what caused that milk/cream mixture, which was heated to a simmer then steeped with toasted parm/etc cheeses, to thicken up like creme fraiche?
