there's a new takeaway sichuan place 2 mins away from our flat. their menu is tiny but well executed. a+ will go again

they also had new halloween deco up last night which is unusual here in general, let alone at a chinese place.

i like this guy though. "eh, it's spooky time i guess?"

i really need to figure out how to do chicken thighs in a pressure cooker so that they're cooked thru properly but don't lose all structural integrity. great for some stews and bbq but sometimes i want proper pieces of chicken. i'm getting to the point where i've dialed the time at pressure back as far as i can and am wondering if i should just switch to lower pressure (and whether my stove-top cooker's high pressure is significantly higher than, say, an instapot's)

also i have so much thai green curry chicken and my apartment smells like lemongrass i'm in heaven

i would imagine that if you're talking bone-in thighs, pressure isn't going to really heat those bones up any faster and imo thats the real tricky part with thighs. i would try lower boost with more time yeah

i've had the 葱爆羊肉 #561, stir fried lamb with onions a bunch of times and it's really good. i've never had a bad dish there, often i just describe some dish and the person at the counter will recommend something ive never heard of and its amazing.



that fried chicken on the left is "7 spice chicken" or something and it's the best chicken on earth. it's so insanely good i asked the counter person how to make it and she gave me a copycat recipe. it's not quite right though...

the pork belly buns and crispy tofy mentioned in the article are great too. the crispy tofu is the dish on the right in my pic above. i used to always try to get as many people as possible to go when i went so we could get a ton of poo poo and try it all. just thinking about it is making me so hungry. a friend of mine grew up in the town their other restaurant was in too so sometimes we get free dishes when we get recognized.

may want to try aiming for 1/2 to 3/4 cooked and finish in a skillet to brown and get some texture. lower pressure is the ticket to that i believe. otherwise i don't have any firsthand advice, except to dig around on instant pot recipe sites because someone has probably had the same goal already
