I'd probably still eat a butter dip, but at least even the bad garlic bread had an attempt at a flavor besides fat and salt.

It's not super different, more that the bread really soaks it up to be a very concentrated fat + salt delivery mechanism. Like I said, I'd probably still eat one, it's more that it's like the prototypical example of bland, unhealthy comfort food that could be made a lot more interesting.

They were on burning 8000 calories a day doing hard physical labor so just eating straight butter was a good idea. See also Tibetan butter tea.
